Ingredients:
Italian Beef Seitan
2 cups of Vital Wheat Gluten
1 cup on nutritional yeast
Pinch of cayenne pepper
1 tsp cumin
1 tsp paprika
1 tsp oregano
1 tsp onion powder
Salt/pepper to taste
1 1/2 cups vegetable broth
2 Tbsp soy sauce
1 Tbsp tomato paste
2-3 sliced garlic cloves
Preheat oven to 325. Mix dry ingredients in a large bowl. Mix wet ingredients in a separate bowl.
Combine the two bowls and mix. Knead dough on flat surface and let sit for 5 mins.
Line a bread loaf pan with parchment paper. Add dough and press down firmly so it is even. Bake for 90 mins. Let it cool enough to slice. I put in the fridge for 30 mins.
After slicing add to the au jus and let simmer for a few mins to let it soak in the juice.
Au jus
4 tsp olive oil
1 white onion sliced
6 cloves garlic sliced
3 cups vegetable broth
4 Tbsp soy sauce
Pinch cayenne pepper
2 tsp cumin
2 tsp paprika
1 tsp oregano
1 tsp onion powder
Salt and pepper to taste
Instructions
Heat garlic and onions in a pan with 2 tsp olive oil on medium heat. Let brown and caramelize. About 8 mins. Add the other ingredients to a sauce pan and then add the onions and garlic. Let simmer on low heat.
Add the beef seitan to the au jus and serve! Any leftovers I like to keep in a container in the juice to really let it soak in the flavor then I reheat in the microwave.
